Healthy living \\ Sweet potato salad

This sweet potato salad is literally the easiest thing ever. When I made this the other night, I just threw in all the ingredients I like and it turned out delicious.

My baby is almost turning one and is loving everything we put in his mouth. He loves it all and can't stand it when we eat and he doesn't lol. Anyway, this salad is also perfect for your little ones!

You'll need:

- A handful of organic (small) tomatoes
- A handful of arugula or mixed lettuce
- 2 sweet potatoes
- 1 zucchini
- 1/2 cup of brown rice
- Peper, salt, low salt soy sauce, ginger oil, olive oil

What you need to do:

- Preheat your oven to 200 degrees and cut your sweet potato into cubes or fries. Sprinkle with salt, peper and a little bit of olive oil. Put in the oven for 25 minutes (or when ready)
- Cook the brown rice according to the package
- Cut your tomatoes and slice your zucchini into spaghetti
- Mix the low salt soy sauce with a bit of salt, peper and ginger oil
- Mix all the ingredients together and sprinkle with your dressing
- ENJOY!
